Salmon and Zucchini Patties

Living a long way from the ocean we don't have access to a fresh seafood market. There is a fishman comes to Parkes on Thursdays. When Peter was working in Parkes we would buy from him sometimes. It was nice and fresh but quite expensive. As Peter no longer goes to Parkes for work we don't bother.
In the absence of fresh fish I have been using canned red salmon. Throughout the summer I have been making nice Thai style fish cakes. Yesterday I felt like a bit of a change. Partly because I wanted to use up some of the zucchinis. In the absence of a recipe I made these up.
Salmon and Zucchini Patties
About 2 cups of coarsely grated zucchini, if you are using bought ones you should probably drain them or squeeze them a bit, I find the fresh ones are nowhere near as watery
1/2 red onion finely chopped
400 g red salmon
1 cup course sourdough breadcrumbs, if we have any stale bread i make it into breadcrumbs and freeze them so I  usually have a good supply
2 eggs
combine all together using a fork, you don't want to make this too smooth  
Form into large ball and roll in more breadcrumbs
sit in the fridge for half an hour or so and then fry in oil until golden and crunchy
I served mine with some aoili and a cucumber salad

 


I have also been looking for ways of using cucumbers as we have a lot. I made this  Cucumber Salad 

and it was delicious. I added cherry tomatoes to the recipe.
I am also experimenting with pickling cucumbers. I found this recipe for  Dill Cucumbers
I just made one small jar using small cucumbers to see how it turns out.

I also like the sound of this, Cucumber Pickle  a bit different flavour to my usual. I will give them a try later on. I love having access to all the recipes on the Internet. Although I have a lot of recipe books sometimes I cant find exactly what I want.

Hi Anne,
Here's my Bread and Butter Cucumber recipe. It's not an original recipe - comes from a book we made as a fundraiser for playgroup when my kids were really little! We all handwrote our favourite recipes then made a little photocopied book. It's still one of my favourite recipe books. The bread and butter cucumber recipe is signed "Margaret", but I can't remember who Margaret was now. It's a great recipe though.

Mix together
6 cups thinly sliced cucumber
500 grams of peeled and thinly sliced onion
1 shredded green capsicm
1/4 cup of salt
Let it stand for 3 hours or so. then rinse well with cold water.

In a stainless steel pot, mix
2 cups brown sugar
2 cups of mild vinegar
2 dessertspoons of mustard seed
1/2 teaspoon turmeric powder, or a teaspoon of grated fresh
a pinch of ground cloves
Bring to the boil and boil for 5 mins, then add the rinsed cucumbers et al and heat slowly to just below boiling point, stirring gently occasionally. Don't boil.

Bottle in sterilised jars.

This is my favourite salmon patties recipe. It's practically a staple in our household!
